Campfire Philly Cheesesteak Sandwich

Philly-Cheesesteak

This Philly cheesesteak stuffs into a loaf of french bread that you can pull apart and gobble up. The foil packet is perfect as it allows the cheese, veggies and roast beef to all melt together providing the same delicious taste as an individually proportioned Philly.

To make things a bit easier, before heading to the campsite saute the onions and peppers and store in a container in the cooler until you need them. This will allow you to easily assemble these sandwiches for a quick, but hearty lunch.

What you will need:

  • One large loaf of french bread
  • 1/4 cup garlic butter (you make your own using butter and garlic powder)
  • 2 cups cooked, sliced onion and pepper (Saute and cook until pepper is cooked through)
    • three sliced peppers
    • one sliced onion
    • 2 Tbsp butter or oil
    • 1/4 cup oyster sauce.  Saute and cook until pepper is cooked through
  • Sliced roast beef
  • Sliced provolone cheese (Mozzarella would work too)
  • Aluminum foil

Directions:

  1. Start by cutting slices into the bread about 1.5 inches apart and not all the way through to the bottom
  2. Butter the insides of each slice
  3. Drop a large spoonful of the pepper mixture into each cut
  4. Then layer with roast beef and cheese
  5. Top each slice with extra cheese
  6. Wrap the entire loaf in aluminum foil.  You may need to use two layers to reach all the way around the sandwich.
    • Tip:  You might want to spray the inside of the aluminum foil with non-stick cooking spray so that the ooey, gooey melty cheese doesn’t all stick to the inside of the packet.
  7. Place the package near the hot coals of a fire (but not IN the fire).  You want to heat the sandwich all the way through so that the cheese all melts.

Irish Sherry Trifle

Irish-Sherry-Trifle-header

Trifles are traditional in England and Scotland, as well as in Ireland.  This tempting Irish Sherry Trifle is made with landyfingers, berries and vanilla. It’s easy and addictive so try this dessert for your next party or potluck.

Serves 6

Ingredients

  • 10 ladyfinger cookies
  • 3 oz raspberry Jell-o gelatin
  • 1 c sherry
  • 1 c fruit (raspberries, strawberries, cherries)
  • 1 c heavy cream
  • 1.5 c vanilla pudding
  • 2 T sugar
  • 3 c milk

Directions

  1. Place the ladyfingers in the bottom of a glass serving dish. Sprinkle with the sherry and leave to soak for 5 minutes.
  2. Arrange the fruit on top in an even layer.
  3. In a separate bowl, add one cup boiling water to the Jell-O and then another 1.5 cup cold water. Stir until crystals dissolve. Pour over the mixture in the dish.
  4. In another bowl, combine the pudding powder, sugar, and a little milk. Heat the rest of the milk in a saucepan, bringing it only just to a boil. Add the pudding mixture mix slowly and heat again, almost to a boil. Stir constantly.
  5. Pour this over the mixture in the glass dish. Cover and chill. Before serving, whip the cream with a little sugar and heap it on the trifle.

Omit the sherry if serving to children.

Love-Yourself

This fun and stackable dish is simple, delicious, and goes over well with all ages.  It’s great for get-togethers as everyone can share in the fun by bringing a topping. With so many food groups incorporated, this meal is not only hearty, but heart healthy.

Serves: 6

Ingredients

  •  2 cans black beans, drained and rinsed
  •  1 cup fresh or frozen corn
  •  1 small shallot, minced
  •  1 tablespoon olive oil
  •  1 cup Chicken, shredded
  •  1 tablespoon chili powder (less or more according to your taste)
  •  1 teaspoon cumin
  •  1 cup salsa

 Prepare following items and place in individual bowls on table:

  • 1 (14.5 ounce) package good quality corn tortilla chips
  • 1 head iceberg lettuce – rinsed, dried, and shredded OR 1 pkg spring mix lettuce
  • 2 – 3 large tomatoes, chopped
  • 1 yellow bell pepper, chopped
  • 1 – 2 lg avocados, chopped
  • 1 cup shredded Pepper Jack or Cheddar cheese
  • sour cream
  • salsa (your favorite)

Directions

  1. In frying pan, saute shallot in oil
  2. When translucent stir in cumin and chili powder
  3. When incorporated stir in beans, corn, chicken
  4. Add salsa, stir,  and let come to a simmer
  5. Heat through on low
  6. While this is heating prepare the toppings

These are easy to make and are always a hit. Chips are the base.  Then each person starts with the bean/corn/chicken mixture then adds what they want.  Very satisfying and good for you.  Enjoy!

Campfire Breakfast Burgers

Breakfast-Burgers-headerIf you love camping and love breakfast, then you won’t want to miss this.  The combination of a runny egg, cheese, sausage, and a to-die-for homemade black pepper biscuit mix makes this breakfast treat worth waking up for. Throw in a cup of campfire coffee and it’s the perfect start to a fun day.

Yield: 12 biscuits

Prep time: 15 minutes

Cook time: 25 minutes

Total time: 40 minutes

Ingredients:

  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 Tablespoon sugar
  • 1 teaspoon salt
  • 6 Tablespoons dry milk powder
  • 2 teaspoons black pepper
  • 4 Tablespoons canola oil
  • 1/2 cup shredded cheddar cheese
  • 1 cup water
  • 12 sausage patties
  • 12 eggs

Directions:

Biscuits:

  1. In a medium bowl, whisk together flour, baking powder, sugar, salt, dry milk powder, black pepper and canola oil until well incorporated. (See notes for storage information).
  2. To mix the biscuits, pour dry mix into medium sized bowl and add 1/2 cup of water.
  3. Slowly add the remaining 1/2 cup of water 1 Tablespoon at a time until the biscuit mix is thick batter.
  4. Stir in cheddar cheese.
  5. Set cast iron pan over medium heat and add oil to coat.
  6. Scoop biscuit mix by the scant 1/4 cup onto pan (you will need to work in small batches).
  7. Allow to cook until first side is golden brown and flip once.
  8. Cook until biscuits are fluffy and cooked through.

Sausage:

  1. Add sausage to a cold cast iron skillet and then set it over medium high heat.
  2. Cook until sausages are golden brown and cooked through, flipping once.
  3. Remove and set aside.

Eggs:

  1. Cook eggs in cast iron skillet until desired doneness.

Split biscuits in half and top with sausage and egg. Add ketchup or hot sauce if desired and place other half of biscuit on top.

Enjoy!

Notes:

This recipe can be cut in half. Simply prepare only half of the biscuit mix to make 6 biscuits and reduce sausage patties and eggs accordingly. Leftover dry biscuit mix can be stored in an airtight container for up to 2 weeks.

Campfire Foil Packet Recipes for Fall

Fall RecipesNow that fall is upon us, camping becomes more and more popular.  The fall temps make for great camping weather, and sitting around the campfire seems very appealing.  But with every camping trip comes the inevitable question, ‘What should we cook?’  This fall, add some delicious seasonal vegetables and potatoes to your grocery list, and try one of these camping favorites!

Fall Vegetable Packets

vegetable packetPackets are one of the easiest ways to cook almost anything over your campfire.  Slice up your potatoes and vegetables and throw them into some aluminum foil. Sprinkle with seasoning, fold up, and roast! Note that these are great on the grill or over the campfire.

INGREDIENTS:

4 medium potatoes, sliced
1 small onion, chopped
4 medium seasonal vegetables, such as squash, broccoli, zucchini, etc.
salt and pepper to taste
1/4 teaspoon garlic powder
4 tablespoons butter

DIRECTIONS:

1. Prepare two foil packets by simply layering together squares of aluminum foil.  You will need four pieces for each packet. You may want to spray the top sheet of each packet with nonstick cooking spray to prevent problems later.
2. In a bowl or a Ziploc bag, toss together the potato slices, onion, and vegetables; season with salt, pepper, and garlic.  Note that you can add more potatoes and vegetables as necessary to feed your crowd.
3. Evenly divide the potatoes between the two foil packets, and top with butter. Fold each packet up.  Start length wise and roll the edges together.  Repeat at each end.  Make sure to seal the edges tightly.
4. You will cook each packet for about 15 minutes per side, flipping just once.  The potatoes will be tender when poked with a fork.

 

Bacon Burger Packets

These make another great meal that can be prepared in packets over the campfire.

INGREDIENTS:

1 and a half pounds of ground beef
1   egg, beaten
1/4 cup lemon juice
1 cup grated cheddar cheese
1/4 cup chopped green pepper
Salt and pepper to taste
1/4 teaspoon garlic powder
4   medium potatoes, sliced
4   thin slices of onion
4   carrots, cut into strips
4   slices bacon

DIRECTIONS:

1. Combine the beef, the beaten egg, lemon juice, cheddar cheese and green pepper.  Then add salt, pepper and garlic powder.  Mix well.  Shape into four burgers.
2. Place each patty onto 4 squares of aluminum foil for each packet. On each burger, add potato slices, one onion slice, and several carrots.
3. Next take one strip of bacon and place on top of each burger.  Seal aluminum foil packets tightly and the cook over campfire for about 45 minutes (or until the burgers are done to your liking).

Using seasonal, fresh vegetables can make eating over a campfire just as wonderful, if not better, as eating at home.  Try these recipes, and maybe add in some s’mores for dessert, and really enjoy your camping trips this fall!

Unique Picnic Recipes You’re Sure To Enjoy

Keeping the menu varied on a picnic can be tough, so here are some ideas that will help you to have a great picnic that really hits the spot.

Chili Dog Fries

If you’re tired of plain old hot dogs, try this meal on for size. Take some frozen french fries and cook them in the oven before your picnic. Get your favorite canned chili (or make your own), roast some hot dogs on the fire, and then slice them up and throw them on the fries. Pour the chili over the fries and dogs, and top with shredded cheddar, ketchup and mustard. This meal has a flavor that will remind you of childhood summers.

Potato Chip Chicken

What says summer like potato chips? If you want some lean protein, get some of your favorite potato chips and crush them up in a tray. Now take some egg wash, dip your chicken in it, and roll it in the potato chips. Roast that in the oven at 375 degrees for 45 minutes, make sure it’s fully cooked, and then serve with some potato salad for a great picnic main course.

Cool Veggie Wraps

Start with a wrap or tortilla (whole wheat, multigrain, and spinach are tasty and offer a low calorie option), spread mayonnaise, and cover that with a layer of corn, beans, sliced cucumber, and diced onion. Put some fresh lettuce on there, top with shredded Parmesan cheese, and roll it up. This is basically a salad in a wrap. You can grill the outside of the wrap to make it crispy if you like. Just make sure not to expose it to heat for more than the twenty seconds or so it takes to sear the outside of the wrap. This one goes great with a smoothie or a tall glass of lemonade and a handful of kettle cooked potato chips.
