s'mores dip

This easy and delicious dessert includes only 3 ingredients.  WOW!!  We can’t decide what we enjoy more about it.  The fact that it takes less than 10 minutes to make or that you don’t end up with a gooey mess all over your hands like you do with traditional s’mores. Enjoy this camping favorite any time of the year!

Ingredients

  • 3/4 cup semisweet chocolate chips
  • 8 large marshmallows; cut in half
  • Graham crackers for dipping

Instructions

  1. Preheat oven to 450 degrees F
  2. In a small cast iron skillet, spread chocolate chips
  3. Arrange the marshmallows on top of the chocolate
  4. Bake in the oven for 6-8 minutes, until marshmallows are lightly browned
  5. Remove from the oven and let cool for 5 minutes
  6. Serve with graham crackers alongside the dip

Thanksgiving Foil Packet Dinner

Thanksgiving is centered around food – turkey, dressing, cranberry sauce and all the pumpkin pie you could ever want! But what happens if you decide to spend your Thanksgiving camping?  Don’t worry — you can still enjoy your turkey and all the fixings with just this one simple recipe.  It’s fun to make and even more fun to eat.

Happy Thanksgiving campers!

Ingredients:

  • 1 turkey cutlet
  • 1 c. prepared stuffing
  • 1/2 c. turkey gravy
  • 1/2 c green beans
  • 1/4 c. dried cranberries
  • salt
  • pepper
  • thyme
  • marjoram

Directions:

  1. Place turkey cutlet on sheet of foil
  2. Put the stuffing on top and the green beans around the cutlet
  3. Pour gravy over everything
  4. Sprinkle the dried cranberries
  5. Season to taste
  6. Wrap in a tent pack (see instructions below)
  7. Place on hot coals for 20 minutes

Tips for creating a tent pack

  1. Tear off a sheet of foil
  2. Place food in the middle of the foil
  3. Bring the long sides together in the center and tightly fold them together towards the food
  4. Stop folding a few inches before you get to the food, leaving a pocket of space and creating a “tent”
  5. Tightly roll up the shorter sides, leaving an inch of space between the end of the fold and the food

You can’t go wrong with this Halloween goodie. It’s the perfect mix of salty and sweet and just oh so delicious.  You can take this tempting treat to any Halloween party, give as gifts, or just keep all to yourself to enjoy while you’re watching your favorite scary movie.

Ingredients

  • Candy corn
  • Pretzels
  • M&Ms
  • Peanuts
  • Marshmallows
  • Whole grain cereal
  • Mini cheese crackers

Directions

  1. Combine all ingredients and serve
  2. The quantities of each ingredient are based on your personal preference
  3. Enjoy!

Dutch Oven Cornbread Chili Casserole

Cornbread Chili CasseroleNothing says fall like a big bowl of warm chili.  It’s the ultimate comfort food.  This easy and delicious recipe is bound to become a campfire classic.  It’s best when shared with family and friends around a cozy campfire.

Ingredients

  • 1 2.5 oz package corn muffin mix
  • 2 eggs
  • 1 11 oz can whole kernel corn with red and green peppers, drained (Mexicorn)
  • 1/2 cup regular OR reduced-fat sour cream
  • 2 T. sugar
  • 1 15 oz can Beef with Beans Chili
  • 1 cup shredded Cheddar-Jack cheese

Directions

  1. Lightly oil or spray 10-inch dutch oven
  2. In large bowl, combine corn muffin mix, eggs, corn with peppers, sour cream and sugar
  3. Spread batter in bottom of prepared dutch oven
  4. Spoon chili evenly over top of batter, up to 1/2 inch of sides of dutch oven
  5. Sprinkle with 1/2 cup cheese
  6. Bake at 375 degrees for 20 minutes
  7. Top with remaining half cup of cheese
  8. Bake for 10-15 minutes more or until bubbly and edges are brown.
  9. Makes 4-6 servings.

Foil Packet Baked Apples

Foil Packet Baked ApplesThis amazing recipe was designed for camping.  This individually sized packet of yumminess is easy, fun, and, most importantly, delicious!  The best part is that everyone can make their own – personally suited for their taste buds. Enjoy!

Ingredients:

  • One apple per person
  • lemon juice
  • 2T water per packet
  • Toppings
    • Orange marmalade
    • Chopped Pecans
    • Raisins
    • Cinnamon

Directions:

  1. Core and slice each apple.  Do not peel.
  2. Place each sliced apple in a sheet of foil
  3. Add any of the toppings desired
  4. Squirt lemon juice in each packet
  5. Add 2T of water to each packet
  6. Seal packet securely
  7. Grill on medium for 20 minutes

Homemade Vitamin Water
Let’s admit it…we probably don’t drink as much water as we should.  After all, water can get boring.  So how do you stay hydrated on those hot summer days and most of your time is spent outside?  Try this homemade vitamin water that will prove to be healthy, refreshing, and most importantly, delicious.  Stay hydrated my friends!

INGREDIENTS

  • 2 cups watermelon, sliced into 1″ cubes
  • 1 lime, sliced
  • 1 lemon, sliced
  • 1/2 red grapefruit, sliced and quartered
  • 1 medium cucumber, sliced
  • 12 mint leaves
  • 2 quarts water
  • ice
  • sparkling water (optional)

INSTRUCTIONS

  1. Combine the fruit, cucumber, mint leaves and water in a large pitcher.
  2. Place in the fridge and let infuse overnight.
  3. To serve, pour infused water into glasses filled halfway with ice. Spoon in a piece or two of fruit for show, and top with a splash of sparkling water (optional).

Note:  For best results prepare the day before.

Campfire Cinnamon Orange Rolls

These fun and delicious breakfast treats are great for camp or on the grill. With the short list of ingredients and simple directions, they are easy enough for your little helpers.  These will be the hit of your next campout!

Ingredients:

  • 1 can of cinnamon rolls
  • 6 Large oranges

You will also need…

  • Spoon
  • Knife
  • Aluminum FoilOrange Directions

Directions:

  1. Cut your oranges in half.
  2. Scoop out the insides of your oranges with a spoon
  3. Open up your cinnamon rolls and place one dough inside of each orange
  4. Press your cinnamon roll inside your orange.
  5. Wrap in aluminum foil and place on your fire for 25-30 minutes or until your dough is cooked
  6. After cooked, spread icing on each cinnamon roll
  7. Enjoy your delicious campfire breakfastOrange Cinnamon Rolls

Campfire Hot Dog Pups

Hot Dog HeaderLet’s be frank: everyone loves a hot dog.  After all, it’s almost an American staple! But sometimes the same ol’ dog can get a bit boring.  So, let’s take your average hot dog and add a new twist – a twist of bacon.  You’ll love it!

INGREDIENTS

  • 8 all beef hot dogs
  • Sliced cheese, cut in strips
  • 10 slices bacon, cut in half crosswise
  • Toothpicks
  • 8 hot dog buns

INSTRUCTIONS

  • Split hot dogs lengthwise, not cutting through
  • Fill with strips of cheese.
  • Wrap 2 strips of bacon around each hot dog and secure with toothpicks.
  • Grill or cook over campfire, cheese side up.
  • Remove toothpicks.
  • Add buns and grill, turning frequently, until warmed and lightly charred, about 3 minutes.
  • Add your favorite toppings and condiments.
  • Enjoy!

Tin Foil Cheese Dip

Tin Foil Cheese Dip Cheese dip on the grill?! Who would have ever thought, but what a great idea! This delicious appetizer will be gone in minutes so you might want to double the recipe.

Ingredients:

  • 2 sheets of tin foil
  • 8 oz. Garlic and herb cream cheese
  • ¾ cup salsa
  • 1 diced tomato
  • Sliced green onion (optional)

Directions:

  1. Place cream cheese on the 2 sheets of tin foil
  2. Add salsa, diced tomatoes and green onion on top of cream cheese
  3. Wrap up in the foil by:
    1. Wrapping up the middle first, folding over 3Tin Foil Cheese Dip times
    2. Roll the ends tightly so that the contents to do leak out
  4. Place foil packet on the hot grill for 10-15 minutes
  5. Open carefully to see if dip is melted and warm. If not, replace for a few more minutes.
  6. When finished melting, open the middle fold to form a bowl for serving
  7. Serve with vegetables, chips, crackers or whatever you feel like dipping
  8. Enjoy!

Easy Dessert Recipes for RVers

There’s nothing worse than being on the road and having a major sugar craving. Sometimes eating a vanilla wafer just isn’t enough, so try one of these quick and easy recipes to take the edge off.

Tin Can Gingerbread Cakes

Supplies needed include a 12-16 ounce container of applesauce, 1 box of gingerbread mix, aluminum foil, hot coals and 6 regular or 2 large metal food cans washed and dried.

  • Thoroughly grease the insides of the cans
  • Pour even amounts of applesauce into each can
  • Mix the gingerbread and fill each can with even amounts of the batter
  • Cover the top of each can with aluminum foil
  • Stir the coals and even them out
  • Place cans on the coals for 15 minutes
  • Do a visual check by carefully removing the aluminum foil to see if the gingerbread has risen and steaming
  • When done, carefully remove from the hot can and serve topped with ice cream or whipped cream, if desired

Cherry Cheese Turnovers

You’ll need crescent rolls (partially baked beforehand) cherry pie filling, cream cheese, butter and sugar.

  • Slice partially baked crescent rolls in half making two separate rolls then slice lengthwise to make a pocket
  • Butter the top of the crescent and sprinkle with sugar
  • Gently pull the roll apart and spread cream cheese on the bottom layer then top with cherry pie filling
  • Fold close and seal using a toothpick
  • Place on the campfire and heat until hot

Smiling Bananas

All you need is 1 bag of miniature marshmallows and 1 bag of chocolate chips, aluminum foil and one banana per person.

  • Slice the banana on one side from top to bottom while it is still in the peel but do not cut all the way through to the other side
  • Gently pull the banana and peel apart creating a crevice
  • Place on a piece of aluminum foil large enough to wrap the banana
  • Fill the crevice with chocolate chips and marshmallows
  • Fold the foil around the filled banana
  • Place on the grill for a few minutes then turn so it heats all the way through
  • Carefully unwrap the banana and eat directly from the peel
