Tin Foil Cheese Dip

Tin Foil Cheese Dip Cheese dip on the grill?! Who would have ever thought, but what a great idea! This delicious appetizer will be gone in minutes so you might want to double the recipe.

Ingredients:

  • 2 sheets of tin foil
  • 8 oz. Garlic and herb cream cheese
  • ¾ cup salsa
  • 1 diced tomato
  • Sliced green onion (optional)

Directions:

  1. Place cream cheese on the 2 sheets of tin foil
  2. Add salsa, diced tomatoes and green onion on top of cream cheese
  3. Wrap up in the foil by:
    1. Wrapping up the middle first, folding over 3Tin Foil Cheese Dip times
    2. Roll the ends tightly so that the contents to do leak out
  4. Place foil packet on the hot grill for 10-15 minutes
  5. Open carefully to see if dip is melted and warm. If not, replace for a few more minutes.
  6. When finished melting, open the middle fold to form a bowl for serving
  7. Serve with vegetables, chips, crackers or whatever you feel like dipping
  8. Enjoy!

Campfire-Eclairs

Satisfy your camping sweet tooth with this clever and delicious treat.  You can do different variations of pudding flavors and even add some sprinkles for fun too.  This will easily become a new campfire favorite for the entire family.

Ingredients

  • Refrigerated crescent rolls
  • Snack pack pudding (your favorite flavor)
  • Chocolate frosting
  • Spray whip cream
  • 5/8″ wooden dowels

Directions

  1. cresent roll dowel rodTake wooden dowel and coat cooking end with oil.
  2. Wrap crescent roll around top and about 4″ down dowel. Make sure it’s not too thick and doesn’t have any holes.
  3. Cook over hot coals until golden brown, not doughy.
  4. Remove from dowel.
  5. Put your favorite flavor of pudding inside.
  6. Frost top and add whip cream…oh, so yummy.

Campfire Philly Cheesesteak Sandwich

Philly-Cheesesteak

This Philly cheesesteak stuffs into a loaf of french bread that you can pull apart and gobble up. The foil packet is perfect as it allows the cheese, veggies and roast beef to all melt together providing the same delicious taste as an individually proportioned Philly.

To make things a bit easier, before heading to the campsite saute the onions and peppers and store in a container in the cooler until you need them. This will allow you to easily assemble these sandwiches for a quick, but hearty lunch.

What you will need:

  • One large loaf of french bread
  • 1/4 cup garlic butter (you make your own using butter and garlic powder)
  • 2 cups cooked, sliced onion and pepper (Saute and cook until pepper is cooked through)
    • three sliced peppers
    • one sliced onion
    • 2 Tbsp butter or oil
    • 1/4 cup oyster sauce.  Saute and cook until pepper is cooked through
  • Sliced roast beef
  • Sliced provolone cheese (Mozzarella would work too)
  • Aluminum foil

Directions:

  1. Start by cutting slices into the bread about 1.5 inches apart and not all the way through to the bottom
  2. Butter the insides of each slice
  3. Drop a large spoonful of the pepper mixture into each cut
  4. Then layer with roast beef and cheese
  5. Top each slice with extra cheese
  6. Wrap the entire loaf in aluminum foil.  You may need to use two layers to reach all the way around the sandwich.
    • Tip:  You might want to spray the inside of the aluminum foil with non-stick cooking spray so that the ooey, gooey melty cheese doesn’t all stick to the inside of the packet.
  7. Place the package near the hot coals of a fire (but not IN the fire).  You want to heat the sandwich all the way through so that the cheese all melts.

Campfire Breakfast Burgers

Breakfast-Burgers-headerIf you love camping and love breakfast, then you won’t want to miss this.  The combination of a runny egg, cheese, sausage, and a to-die-for homemade black pepper biscuit mix makes this breakfast treat worth waking up for. Throw in a cup of campfire coffee and it’s the perfect start to a fun day.

Yield: 12 biscuits

Prep time: 15 minutes

Cook time: 25 minutes

Total time: 40 minutes

Ingredients:

  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 Tablespoon sugar
  • 1 teaspoon salt
  • 6 Tablespoons dry milk powder
  • 2 teaspoons black pepper
  • 4 Tablespoons canola oil
  • 1/2 cup shredded cheddar cheese
  • 1 cup water
  • 12 sausage patties
  • 12 eggs

Directions:

Biscuits:

  1. In a medium bowl, whisk together flour, baking powder, sugar, salt, dry milk powder, black pepper and canola oil until well incorporated. (See notes for storage information).
  2. To mix the biscuits, pour dry mix into medium sized bowl and add 1/2 cup of water.
  3. Slowly add the remaining 1/2 cup of water 1 Tablespoon at a time until the biscuit mix is thick batter.
  4. Stir in cheddar cheese.
  5. Set cast iron pan over medium heat and add oil to coat.
  6. Scoop biscuit mix by the scant 1/4 cup onto pan (you will need to work in small batches).
  7. Allow to cook until first side is golden brown and flip once.
  8. Cook until biscuits are fluffy and cooked through.

Sausage:

  1. Add sausage to a cold cast iron skillet and then set it over medium high heat.
  2. Cook until sausages are golden brown and cooked through, flipping once.
  3. Remove and set aside.

Eggs:

  1. Cook eggs in cast iron skillet until desired doneness.

Split biscuits in half and top with sausage and egg. Add ketchup or hot sauce if desired and place other half of biscuit on top.

Enjoy!

Notes:

This recipe can be cut in half. Simply prepare only half of the biscuit mix to make 6 biscuits and reduce sausage patties and eggs accordingly. Leftover dry biscuit mix can be stored in an airtight container for up to 2 weeks.

Campfire Pumpkin Pie

What a great alternative to the traditional pumpkin pie!  Invite a neighbor over, stand by the warm coals, and visit while this delicious dish cooks up in your dutch oven.

Ingredients

Pie Dough (double crust):
2 2/3 cups all-purpose flour
1 cup cold butter
1/2 cup water

OR you can buy the pre-made pie crust dough and just roll it out in a pie pan.

Filling:
2 cups pureed pumpkin
1 cup packed brown sugar
1 1/2 teaspoons ground ginger
3/4 teaspoon ground nutmeg
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 cups light cream or evaporated milk
3 large eggs

Instructions

  1. Mix together the dry ingredients for the crust and then add water.
  2. Knead until you have made a firm pie dough.
  3. Roll out two sheets with a rolling pan into even and flat pieces of dough in the desired size for the base and top of your pie crusts.
  4. Fit one sheet into a pie pan as the base.
  5. Mix together the pie filling ingredients.
  6. Pour over bottom layer of pie crust in pie pan.
  7. Cover and seal the edges with the second sheet of pie crust dough.

Cooking Method

dutch ovenThe best way to make this over the fire is by using a Dutch oven. You should start by greasing the bottom and sides of the Dutch oven so that your pie does not stick. (This is not necessary if you have a pre-made pie crust already in a foil type pan or if you have rolled out the dough and put into a pan beforehand.) Place the pie crust with the filling in the Dutch oven and place over the hot coals of your fire. Finish by covering the Dutch oven with a lid and placing more coals on top of it. Cook for about 20-25 minutes or until crust is golden brown.

Fall RecipesNow that fall is upon us, camping becomes more and more popular.  The fall temps make for great camping weather, and sitting around the campfire seems very appealing.  But with every camping trip comes the inevitable question, ‘What should we cook?’  This fall, add some delicious seasonal vegetables and potatoes to your grocery list, and try one of these camping favorites!

Fall Vegetable Packets

vegetable packetPackets are one of the easiest ways to cook almost anything over your campfire.  Slice up your potatoes and vegetables and throw them into some aluminum foil. Sprinkle with seasoning, fold up, and roast! Note that these are great on the grill or over the campfire.

INGREDIENTS:

4 medium potatoes, sliced
1 small onion, chopped
4 medium seasonal vegetables, such as squash, broccoli, zucchini, etc.
salt and pepper to taste
1/4 teaspoon garlic powder
4 tablespoons butter

DIRECTIONS:

1. Prepare two foil packets by simply layering together squares of aluminum foil.  You will need four pieces for each packet. You may want to spray the top sheet of each packet with nonstick cooking spray to prevent problems later.
2. In a bowl or a Ziploc bag, toss together the potato slices, onion, and vegetables; season with salt, pepper, and garlic.  Note that you can add more potatoes and vegetables as necessary to feed your crowd.
3. Evenly divide the potatoes between the two foil packets, and top with butter. Fold each packet up.  Start length wise and roll the edges together.  Repeat at each end.  Make sure to seal the edges tightly.
4. You will cook each packet for about 15 minutes per side, flipping just once.  The potatoes will be tender when poked with a fork.

 

Bacon Burger Packets

These make another great meal that can be prepared in packets over the campfire.

INGREDIENTS:

1 and a half pounds of ground beef
1   egg, beaten
1/4 cup lemon juice
1 cup grated cheddar cheese
1/4 cup chopped green pepper
Salt and pepper to taste
1/4 teaspoon garlic powder
4   medium potatoes, sliced
4   thin slices of onion
4   carrots, cut into strips
4   slices bacon

DIRECTIONS:

1. Combine the beef, the beaten egg, lemon juice, cheddar cheese and green pepper.  Then add salt, pepper and garlic powder.  Mix well.  Shape into four burgers.
2. Place each patty onto 4 squares of aluminum foil for each packet. On each burger, add potato slices, one onion slice, and several carrots.
3. Next take one strip of bacon and place on top of each burger.  Seal aluminum foil packets tightly and the cook over campfire for about 45 minutes (or until the burgers are done to your liking).

Cooking With Kids: Campfire Recipes

When we think of campfire cooking, S’mores is typically the first to come to mind. This tried and true recipe is a camping favorite,  but let’s branch out and try something new.  These kid-friendly recipes will make even your pickiest eater happy especially after they get to help make their own treat.

Safety precautions:

  • Obey the campground rules regarding fires and fire safety.
  • Never leave children unattended around the stove or campfire.
  • Be careful not to leave your tongs or other cooking tools too close to the fire. They will get hot quicker than you might think.

Omelet in  a Bag RecipeOmelet in a Bag

This campfire cooking breakfast is so simple to do. Put a large pot of water on a camping stove or on a grate over the campfire and bring the water to a boil. While the water is heating, prepare the boiling bags by first writing everyone’s name on a quart-size freezer bag. Break two eggs into each bag and have your kids add their favorite omelet ingredients. Some options may include:

  • Cheese
  • Ham
  • Pre-cooked bacon or bacon bits
  • Chopped onions
  • Chopped bell peppers

Close the bag and gently shake to mix the ingredients together. Once mixed thoroughly, gently squeeze air out of the bag. (Don’t skip this step or the bag will burst in the boiling water.) Add bags to boiling water and let sit for 10 minutes or until the eggs are solid. Using tongs, take each bag out of the water and pour the omelet onto a plate. Season with salt and pepper.

Adding a side of fruit will round out this nutritious breakfast and get your day off to a great start.

Campfire Pizza Recipe

 

Campfire Flat Bread Pizza

Most of the work involved in this kid-friendly treat is deciding what combination of ingredients to put on your pizza! If you’re able to bring everything to the campsite pre-sliced, the assembly of your pizza goes much faster. Begin by prepping your campfire so that by the time you are ready to cook your pizzas, you have a good bed of coals and low to medium-sized flames under the grill.

Basic ingredients:

  • Flatbread – Use naan bread or pita, lavash or foccacia bread. A pre-cooked pizza crust will also do the trick. If you’re adventurous, experiment with pre-made pizza dough and precook your bread before adding any toppings.
  • Sauce – Use basic marinara or spaghetti sauce or if you want to be fancy, use pesto or a cream-based sauce like Alfredo, or even barbeque sauce. For a sauce- less version, drizzle olive oil and sprinkle with salt and pepper.
  • Cheese – Mozzarella is the crowd favorite but you can also use cheddar, parmesan, goat or blue cheese.
  • Toppings –  Fresh veggies and fruit  like mushrooms, bell pepper, onions, olives, or pineapple
  • Meat – Look for options that are pre-cooked like pepperoni, prosciutto, sliced chicken, crumbled hamburger or sausage or chopped ham

Yield 1 pizza /serving                                                      Prep time: 10-15 minutes   Cook Time: 10-15 minutes

Ingredients

  • 1 flat bread
  • 3-4 tablespoon sauce
  • 1/3 cup cheese, grated
  • 1/3 cup of your favorite veggies, chopped
  • 3-4 slices of meat, optional

Assemble:

  1. Pull out a sheet of foil that is 2X as long as the length of your flat bread and place your bread in the middle.
  2. Layer your ingredients on top of the bread beginning with the sauce followed by cheese and toppings
  3. Wrap your pizza in a sealed foil package leaving room at the top of the pizza so the foil doesn’t rest on the toppings. Tip: stick a few toothpicks in your pizza before closing the packet and this will help keep the foil from resting on your toppings.
  4. Place on grill until the cheese is nice and melted. Open the foil periodically to make sure the bottom of the flatbread is not burning.

Campfire ConeCampfire Cones - Dessert Recipe

Begin by prepping your campfire so that by the time you are ready to cook, you’ve got a good bed of coals and low to medium-sized flames under the grill.

You will need:

  • Sugar cones
  • Peanut butter
  • Mini marshmallow
  • Chocolate chips
  • Bananas
  • Aluminum foil

Here’s what you do:

  1.  Slice bananas
  2. Spread peanut butter inside of each cone; place a couple of marshmallows in the tip of each cone (this will help keep catch drips from leaking through the bottom of the cone)
  3. Layer in bananas, marshmallow and chocolate chips
  4. Wrap the whole cone in aluminum foil, the place over hot coals for 5-10 minutes, turning often
  5. Unwrap cone, checking to see if everything is melted
  6. ENJOY!

Easy Dessert Recipes for RVers

There’s nothing worse than being on the road and having a major sugar craving. Sometimes eating a vanilla wafer just isn’t enough, so try one of these quick and easy recipes to take the edge off.

Tin Can Gingerbread Cakes

Supplies needed include a 12-16 ounce container of applesauce, 1 box of gingerbread mix, aluminum foil, hot coals and 6 regular or 2 large metal food cans washed and dried.

  • Thoroughly grease the insides of the cans
  • Pour even amounts of applesauce into each can
  • Mix the gingerbread and fill each can with even amounts of the batter
  • Cover the top of each can with aluminum foil
  • Stir the coals and even them out
  • Place cans on the coals for 15 minutes
  • Do a visual check by carefully removing the aluminum foil to see if the gingerbread has risen and steaming
  • When done, carefully remove from the hot can and serve topped with ice cream or whipped cream, if desired

Cherry Cheese Turnovers

You’ll need crescent rolls (partially baked beforehand) cherry pie filling, cream cheese, butter and sugar.

  • Slice partially baked crescent rolls in half making two separate rolls then slice lengthwise to make a pocket
  • Butter the top of the crescent and sprinkle with sugar
  • Gently pull the roll apart and spread cream cheese on the bottom layer then top with cherry pie filling
  • Fold close and seal using a toothpick
  • Place on the campfire and heat until hot

Smiling Bananas

All you need is 1 bag of miniature marshmallows and 1 bag of chocolate chips, aluminum foil and one banana per person.

  • Slice the banana on one side from top to bottom while it is still in the peel but do not cut all the way through to the other side
  • Gently pull the banana and peel apart creating a crevice
  • Place on a piece of aluminum foil large enough to wrap the banana
  • Fill the crevice with chocolate chips and marshmallows
  • Fold the foil around the filled banana
  • Place on the grill for a few minutes then turn so it heats all the way through
  • Carefully unwrap the banana and eat directly from the peel

Coach-Net BBQ Recipe Contest

There are those who walk among us with super-human capabilities. They are the magical masters of the grill. They have the ability to make people’s mouths water with the mere sight of their efforts. They can draw neighbors from great distances with just the smell of smoke. Somehow they have found the secret to the barbecue.

Perhaps it is genetic, handed down in some mysterious family BBQ DNA. There are those of us who hope it is a learned skill, and continue to try to achieve a semblance of barbecue success. Despite all of our efforts, the grill masters have reached a level of taste, texture, and flavor that exceed the rest.

If you have achieved a level where friends, relatives, and neighbors gather to taste your barbecue creations, we are looking for you! We are in search of the best barbecue recipes we can find and are willing to reward you for your efforts. We are encouraging those with this special talent to enter our first ever BBQ Recipe Contest. The grand prize? A $200 grilling package!

Yes, we know that those who imitate your recipe will not achieve your greatness. There is a talent that cannot be shared by the mere sharing of a recipe. It will however, serve to inspire those who are searching for greatness to continue trying.

So what do you say? Are you the owner of such a recipe? Do you know someone who is an exceptional master of the grill? You have until July 31st to enter your best barbecue recipe, or encourage someone you know to do so. Are you a specialist in pork, chicken, beef or something else? Choose your weapon and send your recipe to us. We love pictures but they are not a requirement. The rules are loose so if you can cook it on a grill and it is tasty, send that recipe to us. To get you started thinking about recipes, here’s a quick and easy grilling marinade for virtually any meat using 3 simple ingredients:

Simply mix an 8-ounce bottle of red French dressing, a 10-ounce jar of apricot preserves and a single envelope of dry onion soup mix. Marinate your meat with the mixture in a large bowl for about an hour and get grilling!

Five Campfire Recipes You Are Sure to Enjoy

If you are eagerly awaiting the arrival of spring to take the first camping trip of the year, take some time to check your equipment and make a list of your favorite destinations. These tasty and easy campfire recipes will help you spend more time admiring the beauty of nature while enjoying delicious foods.

Shish kebabs

Pack some bamboo skewers and cut your ingredients into cubes before you depart to make preparation a snap when you arrive at the campsite.

  • One pound of chicken, beef, or pork cut into one-inch cubes
  • Two large green or red bell peppers, cut into one-inch chunks
  • One large white or yellow onion, cut into one-inch chunks

Arrange the ingredients on bamboo skewers that have soaked overnight in a bowl of water. Arrange the loaded skewers on a grilling gate and rotate them to cook them evenly for about 20 minutes.

Grill Kebabs

Mess-less S’Mores

Building classic s’mores is a fun campfire activity, but they get quite messy after you eat one or two. This is a cleaner and quicker option if you are serving quite a few hungry campers.

  • Pack of 12 tortillas
  • One large bar of milk chocolate
  • Bag of mini-marshmallows

Warm the tortilla in a pan or on a grill over the fire. Add two blocks of chocolate and a handful of mini-marshmallows, then fold the tortilla in half and return it to the fire. Let it warm enough to melt the ingredients.

Quick Foil Fish

Anyone who loves to fish during their camping trips will love this simple way to cook their fresh catch.

  • Aluminum foil folded into a packet
  • Fresh fish, cleaned and filleted
  • Can of diced potatoes
  • ¼ cup of diced onions
  • Salt and pepper
  • 1 teaspoon dill weed
  • 1 teaspoon paprika

Lay the fish, onions, and potatoes to the foil packet. Sprinkle on the spices and fold the packet shut. Place the packet on a grill over the campfire or on a bed of smooth, raked coals. Let the fish cook for about 15 minutes.

Singing Apples

Kids and adults alike will love this fun, roasting recipe, which yields a healthy and tasty dessert.

  • Your favorite apples, washed and with the stems removed
  • Equal parts of cinnamon and brown sugar

Poke your roasting fork or a clean, sturdy stick through the center of the apple. Roast it over the open fire until the skin crackles and makes a loud whistling noise. Carefully peel off the skin with a fork, then roll the apple in the sugar mixture and enjoy.

Singing Apples Dessert

Orange Muffins

  • Whole oranges
  • One box of instant muffin mix requiring only water
  • Aluminum foil

Slice the oranges in half and remove the pulp. Prepare the muffin mix, and then pour it into the orange shells. Cover the orange in foil and bake the muffin nestled in the coals for 10 minutes.
