Sassy Grilled Shrimp

Grilled-Shrimp

July is National Grilling Month so let’s fire up the grill and throw some shrimp on the Bar-B. Cookbook author and Coach-Net member, Jane Vogel, shares this easy-to-follow Chili Grilled Shrimp recipe. As a full-time RVer, Jane’s cooking philosophy is to keep things simple – either grill it or skillet! This recipe, like the others in her book, calls for simple ingredients combined with simple preparation and yields simply delicious fare.

Ingredients:

  • Large or jumbo shrimp, deveined but not peeled
  • 2 T. olive oil
  • 2 t. paprika
  • Salt and pepper
  • 1/3 c. minced parsley
  • 3 T. lemon juice
  • 1/2 stick butter, melted
  • 2 T. bottled hot sauce
  • 1 T. minced garlic or 3 T. if from a jar
  • 4 dashes Worcestershire sauce
  • Lemon sauce

Instructions:

  1. Combine parsley, butter, lemon juice, hot sauce, garlic, and Worcestershire in one gallon, plastic storage bag and set aside.  NOTE: You’ll be tossing the grilled shrimp in this mixture when taking it off the grill, so keep this at the ready when putting shrimp on the grill.
  2. Combine olive oil, paprika, salt and pepper and coat raw shrimp in a bowl, using clean fingers to toss.
  3. Assemble on skewers, leaving a little air space between each shrimp for even cooking.
  4. Grill, medium hot, 4 minutes per side.
  5. Slip off skewers into prepared and waiting bag of butter and spices and toss.
  6. Serve with lemon wedges and a paper towel for removing shells.  Have a plate or bucket on the picnic table for tossing the shells.

Campfire Philly Cheesesteak Sandwich

Philly-Cheesesteak

This Philly cheesesteak stuffs into a loaf of french bread that you can pull apart and gobble up. The foil packet is perfect as it allows the cheese, veggies and roast beef to all melt together providing the same delicious taste as an individually proportioned Philly.

To make things a bit easier, before heading to the campsite saute the onions and peppers and store in a container in the cooler until you need them. This will allow you to easily assemble these sandwiches for a quick, but hearty lunch.

What you will need:

  • One large loaf of french bread
  • 1/4 cup garlic butter (you make your own using butter and garlic powder)
  • 2 cups cooked, sliced onion and pepper (Saute and cook until pepper is cooked through)
    • three sliced peppers
    • one sliced onion
    • 2 Tbsp butter or oil
    • 1/4 cup oyster sauce.  Saute and cook until pepper is cooked through
  • Sliced roast beef
  • Sliced provolone cheese (Mozzarella would work too)
  • Aluminum foil

Directions:

  1. Start by cutting slices into the bread about 1.5 inches apart and not all the way through to the bottom
  2. Butter the insides of each slice
  3. Drop a large spoonful of the pepper mixture into each cut
  4. Then layer with roast beef and cheese
  5. Top each slice with extra cheese
  6. Wrap the entire loaf in aluminum foil.  You may need to use two layers to reach all the way around the sandwich.
    • Tip:  You might want to spray the inside of the aluminum foil with non-stick cooking spray so that the ooey, gooey melty cheese doesn’t all stick to the inside of the packet.
  7. Place the package near the hot coals of a fire (but not IN the fire).  You want to heat the sandwich all the way through so that the cheese all melts.

Campfire Breakfast Burgers

Breakfast-Burgers-headerIf you love camping and love breakfast, then you won’t want to miss this.  The combination of a runny egg, cheese, sausage, and a to-die-for homemade black pepper biscuit mix makes this breakfast treat worth waking up for. Throw in a cup of campfire coffee and it’s the perfect start to a fun day.

Yield: 12 biscuits

Prep time: 15 minutes

Cook time: 25 minutes

Total time: 40 minutes

Ingredients:

  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 Tablespoon sugar
  • 1 teaspoon salt
  • 6 Tablespoons dry milk powder
  • 2 teaspoons black pepper
  • 4 Tablespoons canola oil
  • 1/2 cup shredded cheddar cheese
  • 1 cup water
  • 12 sausage patties
  • 12 eggs

Directions:

Biscuits:

  1. In a medium bowl, whisk together flour, baking powder, sugar, salt, dry milk powder, black pepper and canola oil until well incorporated. (See notes for storage information).
  2. To mix the biscuits, pour dry mix into medium sized bowl and add 1/2 cup of water.
  3. Slowly add the remaining 1/2 cup of water 1 Tablespoon at a time until the biscuit mix is thick batter.
  4. Stir in cheddar cheese.
  5. Set cast iron pan over medium heat and add oil to coat.
  6. Scoop biscuit mix by the scant 1/4 cup onto pan (you will need to work in small batches).
  7. Allow to cook until first side is golden brown and flip once.
  8. Cook until biscuits are fluffy and cooked through.

Sausage:

  1. Add sausage to a cold cast iron skillet and then set it over medium high heat.
  2. Cook until sausages are golden brown and cooked through, flipping once.
  3. Remove and set aside.

Eggs:

  1. Cook eggs in cast iron skillet until desired doneness.

Split biscuits in half and top with sausage and egg. Add ketchup or hot sauce if desired and place other half of biscuit on top.

Enjoy!

Notes:

This recipe can be cut in half. Simply prepare only half of the biscuit mix to make 6 biscuits and reduce sausage patties and eggs accordingly. Leftover dry biscuit mix can be stored in an airtight container for up to 2 weeks.

This dip is AMAZING! It’s so full of delicious eggnog flavor and so easy to put together. It pairs perfectly with some gingersnaps or graham crackers!  It’ll be the talk of any holiday gathering.

Ingredients

  • 8 oz cream cheese, room temperature
  • 1/2 cup eggnog, room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp rum extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 cups powdered sugar

Instructions

  1. Beat the soft cream cheese until smooth.
  2. Mix in the vanilla extract, rum extract, cinnamon, and nutmeg.
  3. Beat in the eggnog, and then the powdered sugar.
  4. Store in an airtight container in the refrigerator until ready to serve.
  5. Serve with graham crackers or ginger snap cookies.

Campfire Pumpkin Pie

What a great alternative to the traditional pumpkin pie!  Invite a neighbor over, stand by the warm coals, and visit while this delicious dish cooks up in your dutch oven.

Ingredients

Pie Dough (double crust):
2 2/3 cups all-purpose flour
1 cup cold butter
1/2 cup water

OR you can buy the pre-made pie crust dough and just roll it out in a pie pan.

Filling:
2 cups pureed pumpkin
1 cup packed brown sugar
1 1/2 teaspoons ground ginger
3/4 teaspoon ground nutmeg
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 cups light cream or evaporated milk
3 large eggs

Instructions

  1. Mix together the dry ingredients for the crust and then add water.
  2. Knead until you have made a firm pie dough.
  3. Roll out two sheets with a rolling pan into even and flat pieces of dough in the desired size for the base and top of your pie crusts.
  4. Fit one sheet into a pie pan as the base.
  5. Mix together the pie filling ingredients.
  6. Pour over bottom layer of pie crust in pie pan.
  7. Cover and seal the edges with the second sheet of pie crust dough.

Cooking Method

dutch ovenThe best way to make this over the fire is by using a Dutch oven. You should start by greasing the bottom and sides of the Dutch oven so that your pie does not stick. (This is not necessary if you have a pre-made pie crust already in a foil type pan or if you have rolled out the dough and put into a pan beforehand.) Place the pie crust with the filling in the Dutch oven and place over the hot coals of your fire. Finish by covering the Dutch oven with a lid and placing more coals on top of it. Cook for about 20-25 minutes or until crust is golden brown.

Goblin It Up!

Recipe-header2We are always looking for new and fun recipes to share and this Halloween Popcorn Ball recipe is one of our favorites from The Pioneer Woman, Ree Drummond.

POPCORN BALLS

Prep Time: 10 Minutes
Cook Time: 10 Minutes
Difficulty: Intermediate
Servings: 12

Ingredients

  • 1/4 cup Peanut Oil
  • 6 Tablespoons Popcorn Kernels
  • 1/2 cup Sugar
  • 4 Tablespoons Butter
  • 6 ounces, weight Mini Marshmallows (about Half A Package)
  • Orange Food Coloring (optional)
  • 1 cup Candy Corn
  • 1/2 cup Shelled Unsalted Peanuts
  • Cooking Spray

Preparation Instructions

Add the oil to a medium saucepan (one that has a tight-fitting lid) over medium-high heat. Add the popcorn and shake the pan gently to make sure the kernels are coated. When the oil starts to sizzle, but before the corn starts popping, add the sugar to the pan. Shake the pan again, and when the first couple of kernels pop, place the lid on the pan and shake the pan gently with the other hand while you hold the lid in place. Keep doing this as the popcorn pops, until the popping slows down.

When almost all the kernels have popped, pour the popcorn onto a parchment paper-lined baking sheet, separating the kernels slightly with a spatula or spoon. Let the popcorn cool slightly.

Meanwhile, melt the butter in a separate pot over low heat. Add the marshmallows, stirring as they melt. When the marshmallows are almost melted, add 2 or 3 drops of orange food coloring (this is optional!) Stir it to combine.

Remove the pot from the heat and add the popcorn to the pot, stirring immediately to coat it as quickly as possible. Right after stirring, add the candy corn and the peanuts and stir until the candy and nuts are totally worked in.

Spray your hands lightly with cooking spray and form the popcorn mixture into individual balls 2 to 3 inches in diameter. Set them aside and let them cool and set completely! Serve at room temperature.

Coach-Net BBQ Recipe Contest

There are those who walk among us with super-human capabilities. They are the magical masters of the grill. They have the ability to make people’s mouths water with the mere sight of their efforts. They can draw neighbors from great distances with just the smell of smoke. Somehow they have found the secret to the barbecue.

Perhaps it is genetic, handed down in some mysterious family BBQ DNA. There are those of us who hope it is a learned skill, and continue to try to achieve a semblance of barbecue success. Despite all of our efforts, the grill masters have reached a level of taste, texture, and flavor that exceed the rest.

If you have achieved a level where friends, relatives, and neighbors gather to taste your barbecue creations, we are looking for you! We are in search of the best barbecue recipes we can find and are willing to reward you for your efforts. We are encouraging those with this special talent to enter our first ever BBQ Recipe Contest. The grand prize? A $200 grilling package!

Yes, we know that those who imitate your recipe will not achieve your greatness. There is a talent that cannot be shared by the mere sharing of a recipe. It will however, serve to inspire those who are searching for greatness to continue trying.

Simply mix an 8-ounce bottle of red French dressing, a 10-ounce jar of apricot preserves and a single envelope of dry onion soup mix. Marinate your meat with the mixture in a large bowl for about an hour and get grilling!

While we all climb aboard our Rvs for a great road adventure, more and more of us are concerned about healthy foods. What beverages do we stock? What are the healthiest meals to prepare? How do we make sure we are all eating at least somewhat healthy as we travel across the roadways of America?

We concern ourselves with these thoughts as we stock our RV with chips, dip, pretzels, popcorn and sodas.

Certainly, our main meals on the road are important. These are the times we take time to cook-out some barbecued chicken or cook up a big pot of pasta and garlic bread. There are things we can do to make these dinners healthier. But we may be missing a greater problem. Our snacks.

What about those snacks? You know the inevitable munchies that nag at you while you are driving or are between meals. Are there some healthy alternatives to chips, chocolate and pretzels? What is there to munch on besides nachos or cheese puffs?

Here are a few healthier suggestions for the road. Give them a chance before you dismiss them as a snack that your crew won’t accept.

Fruits

Bananas are a great source of potassium and can almost instantly restore energy to tired travelers. Grapes are easy to travel with and easy to eat on the road. Pack up some blueberries and strawberries and cut up some apple and peach splices for refreshing snacks that will give you an energy boost without compromising your family’s health.

Veggies

Vegetables can be bite-sized, healthy and fun. Chop up some baby carrots, small slices of green pepper, celery, and cucumber and add some creative dips. The dips may be ranch dressing, blue cheese dressing, peanut butter, hot sauces or even mustard sauces. Give your family the chance to try something different and ask them their opinion. You may find some new “loves” for snacks. Don’t forget the veggies that may be a bit more “exotic” like eggplant or squash. Just don’t tell them ahead of time!

Bite Sized Sandwiches

No matter what type of sandwich you create, it can be much more enjoyable when cut in bite-sized pieces.
